In the heart of Las Vegas, a new home of luxury and culinary excellence has emerged: Fontainebleau Las Vegas. As its grand doors swing open, it's not just the opulence of the hotel that's capturing the attention of travel connoisseurs, but an astonishing array of 36 restaurants nestled within its walls. What's truly remarkable is the Miami connection, a bold move that sees the Magic City's beloved dining brands making their mark in Las Vegas

Papi Steak Las Vegas

Among the culinary stars making this cross-country journey is David Grutman, the renowned nightlife impresario and restaurateur. Grutman's iconic Miami brands, Komodo and Papi Steak, are set to bring their unique flair to Las Vegas, infusing the city with a taste of Miami's dynamic dining scene.

El Bagel Las Vegas

The connection deepens with Fontainebleau Miami Beach's own distinguished brands making the leap. Vida, with its sumptuous all-day dining, Chez Bon Bon's exquisite confectioneries, the vibrant Mediterranean flavors at La Cote, and the standalone restaurant sensations that are some of my favorite, Miami Slice and El Bagel, all bring a slice of Miami's diverse culinary landscape to Las Vegas.

Adding a personal touch to this culinary migration is my old friend, Chef Josh Capon. Having worked together at the Loews Miami Beach Hotel with Lure Fishbar, I've witnessed first-hand his exceptional culinary skills and passion. Capon's latest venture, Capon's Burgers, is set to become a Las Vegas favorite, offering gourmet burgers that are a testament to his culinary prowess.

This culinary odyssey from Miami to Las Vegas is more than just a business expansion; it's a cultural exchange. Each restaurant brings with it the essence of Miami - a city known for its vibrant energy, diverse flavors, and a spirit of innovation. Fontainebleau Las Vegas is not just opening its doors to guests; it's opening a gateway to a rich, gastronomic experience that intertwines two dynamic cities.

As a Miami native, it fills me with pride to see our local brands expand their horizons. It’s a testament to the quality and appeal of Miami’s culinary scene. The Fontainebleau Las Vegas stands as a symbol of this success, a place where the heart of Miami's culinary artistry beats strongly in the rhythm of Las Vegas' vibrant lifestyle.

For both cities, this is more than just a fusion of flavors. It's a celebration of culinary art, a testament to the prowess of chefs and restaurateurs from Miami, and an invitation to the world to savor the essence of two cities renowned for their zest and allure. As Fontainebleau Las Vegas opens its doors, it’s not just a new chapter for the hotel; it’s a new chapter in the culinary connection between Miami and Las Vegas.
